Maricopa residents waiting for the city’s first Someburros may not have much longer to wait. According to InMaricopa, construction on the restaurant in the Stonegate development is about two-thirds complete.
Someburros President Tim Vasquez said the project has made steady progress in recent months. He said the exterior brick and stucco work is finished, while crews have framed and drywalled the interior, installed HVAC ductwork and placed kitchen hoods.
Vasquez said underground utilities still need to be completed before workers can pave the parking lot and finish some exterior details, including canopies. Even so, he said interior work is continuing at a fast pace.
The chain has been working toward a Maricopa location for more than a year after buying land in the Stonegate development. Vasquez said the company is hopeful it can open this fall, followed by a soft opening and then a larger grand opening celebration with a ribbon cutting and mariachis.
