Sakura Asian Kitchen set to open in former Asian Seoul’s Copa Kitchen space

Sakura Asian Kitchen is planning to open in mid-October in the former Asian Seoul’s Copa Kitchen location at 20924 N. John Wayne Parkway, according to owner Steve Hwang and InMaricopa.

The new restaurant will feature a quick-serve setup, with customers ordering at the counter rather than dining in as they did at the previous business. Renovations have already been underway, including the addition of a counter and a dividing wall.

Hwang said the menu will focus on Asian food favorites such as sushi, teriyaki bowls, noodles and tuna poke. He pointed to his Hawaiian-style poke and spicy tuna poke as two items to watch for.

According to InMaricopa, the opening comes after sign permits were submitted in August. Hwang, who lives in Cobblestone, said he and his family recently sold their dine-in sushi restaurant in Mesa so they could concentrate on running a local business in Maricopa.

Hwang said he and his family moved to Maricopa in 2020 and wanted a restaurant that reflected the kind of food they enjoy. He also said he hopes to add a ramen bar in the future.
