Maricopa’s first Someburros restaurant will not open this fall as originally hoped. Owner Tim Vasquez said a delay involving a utilities contractor has moved the expected opening to mid-December.
“Unfortunately, it’s really out of our control,” Vasquez told InMaricopa. He had previously been aiming for a fall debut at the Stonegate development on Maricopa-Casa Grande Highway.
In July, construction on the restaurant was about two-thirds finished. Vasquez now expects there will still be at least another month and a half of work after the utilities issue is resolved.
Even with the delay, he says the grand opening will be a celebration, featuring mariachis, prizes and a donkey named Nacho. The restaurant will offer a drive-through as well as a dining room for guests who want to sit down.
Vasquez also highlighted some menu favorites, including the pollo fundido, along with combo meals that include tacos, rice and beans. He said Maricopa has been asking for more sit-down restaurants and said the team is eager to open for the community.
